Creamy Potato Soup
- 5 potatoes, peeled and chopped
- 1 ½ cups heavy cream
- 1 ½ cups water
- 1 onion chopped
- 1 stick butter
- 4 garlic cloves, crushed
- 2 tsp kosher salt
- 1 tsp pepper
- Put potatoes, cream, water, butter into a pot and cook over medium heat.
- When the butter has melted add the onion, garlic, salt, and pepper. Continue until potatoes are soft.
- Remove the pot from the heat and use an immersion blender or food processor, blend until smooth.
Serve warm with dinner rolls or wheat bread.
